David Chang is an institution, so with little time in New York and no reservation required, his Ssäm Bar at 207 2nd avenue, is an obvious choice. After a quick drink at Booker and Dax, we where seated to enjoy an experience regarded by many as one of the finest in the world. Dispite this, it is comfortable and casual, good food with no pretension. The dishes are designed to be shared and vary in size, so a little guidance is required for first timers.

Between three people I ordered; a half dozen naked cowgirl oysters served with a ham fat, lime & satsuma powder. Followed by dry aged sirloin tartare with watermelon radish, spinach & nori. And Fuji apple kimchi mixed with maple labne, jowl bacon & arugula. Building to BBQ crispy pork belly buns with coleslaw & smoked mayonnaise. And veal sweetbreads served with almond, sauerkraut & Thai chili. Finishing on spicy pork sausage & rice cakes with Chinese broccoli & sichuan peppercorns. All enjoyed alongside a small bottle of Chikurin Karoyaka sake.
